Minestrone with Spicy Sausage and Quinoa
I was never a fan of minestrone soup, and certainly not anything with a tomato base. But this Minestrone recipe by Ellie Krieger won me over. It’s a great way to get in your vegetables, too.
However, since finding this recipe I’ve gone gluten free, so now I can’t have pasta. Or should I say I’ve not found a gluten free pasta that is any good if not eaten in 10 minutes. Is it just me or does the texture just turn to total gritty mush if gluten free pasta isn’t eaten immediately? I’ve since found out that I love quinoa in soup. To substitute it in this recipe I added just 1/3 cup quinoa in place of the pasta, and let it simmer for the last 30 minutes. Apparently I’m picking about beans as well, so I tried substituting some other meats, and found that I love it with spicy ground sausage. The spicy adds just enough extra flavor and zing to the soup. I brown the sausage first, and drained it on paper towels before proceeding with the recipe as directed. Give it a try!
